With Figawi on the docket this weekend we’re getting our livers prepared by looking for delicious sailing themed drink recipes. Where better to look for inspiration than from Ireland’s own legendary band The Pogues, who’s lead singer took a necessary 10 year hiatus from the band for excessive drinking. The stars must have aligned somewhere because it just so happens The Pogues have recently teamed up with one of Ireland’s last-standing independent distilleries to create their very own Irish Whiskey. Add in the fact that they’ve created a song and now a drink called Thousands are Sailing and we’ve got a winner.

Thousands Are Sailing (aka Irish Mojito)

Press 5-7 mint leaves gently in a tall glass

Shake these ingredients with ice:

1.5 oz Pogues Irish Whiskey
.75 fresh lime juice
.75 simple syrup

Double strain over fresh ice in the tall glass with mint

Top with soda water & mint sprig garnish
